Today I am going to do an easy fried rice using whole mung bean with skin which is unusual.  We use mung bean in mild curry form, in porridge with rice or as sweet porridge and make sweets.

Serves: 4

1.In a pan add 1 cup mung beans and add water to cover the beans. Bring to the boil. Reduce the heat to low and let it simmer covered for 30 minutes or until the beans are soft. If the bean crushes in your fingers it is soft. Drain and keep aside.


2. In a bowl mix 100 grams  diced coconut and ½ tsp turmeric powder and keep aside.

3. In a large pan heat 3 table spoon of oil. When the oil is hot, reduce the heat to low and add 150 grams onion, coarsely chopped and fry for 5 minutes. 



4. Add 6 dry red chili broken into big pieces and fry for 1 minute. 

5. Add 1 green chili, cut into small pieces,4 cloves garlic, sliced, 20 grams ginger, finely chopped and 5 curry leaves, chopped and fry for 2 minutes.

6. Add ½ tsp cumin seeds and ½ tsp fennel seeds and fry for a minute.

7. Add cooked mung beans and 1 tsp salt. Mix well and cook for 3 minutes.  

8. Add coconut and Stir.

10. Now add the cooked rice. Stir well to ensure all the ingredients are distributed evenly. Taste for seasoning and adjust.  

   Fried rice using whole mung bean with skin is ready.

3 tbsp. vegetable oil

½ tsp cumin seeds
½ tsp fennel seeds
6 dry red chili broken into big pieces
½ tsp turmeric powder

In a bowl mix the diced coconut and turmeric powder and keep aside. This is only to give a golden colour to the coconut.

Method

Add cooked mung beans and salt.Mix well and cook for 3 minutes.

Now add  the cooked rice.

Stir well to ensure all the ingredients are distributed evenly. Taste for seasoning and adjust.

The fried rice is ready. This is a complete meal with carbohydrates and protein. 
Serve while still hot.
