Pork Luncheon Meat Sandwich

The pork luncheon meat is  stir fried with egg to become a delicious breakfast sandwich filling especially for children.

Serves 4

1. Crumble 1 can of pork luncheon meat into small pieces.

2. Beat an egg in a small bowl with ¼ teaspoon of pepper. We are not adding any salt because the luncheon meat will give all the salt necessary.

 3.Toast the bread slices and spread 1 tbsp of butter on one side of the slices.

4. Heat a frying pan or a wok and add 1 tablespoon of vegetable oil. 


5. Add 1 onion chopped fine, 
3 cloves garlic minced and 1 green chili sliced into thin pieces and stir-fry in a very low heat for about 8 minutes.

6. Add the beaten egg and scramble it along with other ingredients. This will take about 5 minutes. Keep the heat very low.
6. Add crumbled luncheon meat and continue frying for another 5 minutes stirring frequently.

Take the pan off the heat. You can also fry crumbled pork after the onion mixture is ready. When the pork is cooked add beaten egg and scramble it.

 Put a salad leaf on the  buttered side of the bread and spread a layer of  the mix and cover with another slice of bread.

Cut bread diagonally so that it will be easier to handle when eating.

5 curry leaves
1 green chili sliced into thin pieces
1 onion chopped fine
1 table spoon of butter
¼ teaspoon of pepper
1 tablespoon of vegetable oil
8 Slices of bread
8 salad leaves (optional)

Method

Heat a frying pan or a wok and add the vegetable oil. Add the onion, garlic and green chili, curry leaves and stir-fry in a very low heat for about 8 minutes. Take care by stirring frequently not to burn the ingredients. Add the beaten egg and scramble it along with other ingredients. When scrambling, break the egg into small pieces with a ladle or spoon.  You will fry the egg more than the normal scrambled egg or until the egg pieces take a light brown color. This will take about 5 minutes. Keep the heat very low.
Add crumbled luncheon meat and continue frying for another 5 minutes stirring frequently.
