Mung bean soup is a favorite street food in South Asia. It is served hot or cold. It is a sweet soup. It is a cheap and nutritious desert. It is very easy to make.

Serves : 1

1. In a medium sized pan add 100 grams dried mung beans and ample water. The water should be at least half inch above the beans.

2. Bring the pan to a boil. Reduce the heat to low.

3. Cover and simmer for about 30 to 45 minutes or until the beans are soft. 

4. Some water will be evaporated but we want some water to remain with the beans.
Ingredients

5. When the beans are soft add 25 grams grated palm brown sugar (GulaMelaka), ½ tsp salt and ½ cup coconut milk.

6. Add 2 cardamon pods, and boil 
for about 5 minutes.

7. Take off the heat and let it cool down. When cool chill it in the refrigerator.


8. Serve chilled.

Preparation
Grate the palm sugar and set aside

Method

In a medium sized pan add the beans and ample water. The water should be at least half inch above the beans.

Cover and simmer for about 30 to 45 minutes or until the beans are soft.

When the beans are soft add palm sugar, salt and coconut milk. 

Boil for about 5 minutes.

Take off the heat and let it cool down. When cooled chill it in the refrigerator.

Serve chilled.

Palm sugar and coconut  will turn this into a delicious desert.

Note:
I did not soak the beans before boiling. If you soak it for about 30 minutes you will save some cooking time.

Alternatively you can cook this in a microwave oven for about 10 minutes and then simmer it on low heat. This method will reduce cooking time considerably.
