Halibut is a flat fish which has dense and firm texture. It has a very low fat content.

Serves: 6


1. Add 1 tsp salt salt and ½ tsp turmeric to 400 grams of halibut filet, cut into bite size pieces and coat well. 

2. Let it marinate for about 20 minutes.

3. In a large pan add 3 tbsp vegetable oil and heat it. 

4. When the oil is hot reduce the heat to low and add 1 dry chili and fry for 2 seconds.

5. Add ½ tsp mustard seeds to splutter followed by ½ tsp cumin seeds, and ½ tsp fenugreek seeds and fry for 10 seconds. 

6. Add 3 x 2" lemon grass, 5 inch piece of pandan leaf and fry for 2 minutes.

7. Add 150 grams onion chopped coarsely, 3 cloves garlic sliced, 10 curry leaves chopped, and one green chili sliced into thin pieces and fry for 5 minutes.

8. Stir frequently to ensure that the ingredients do not get burnt.

9.  Add 1 tbsp curry powder, 1 tsp chili powder(optional) and add 3 cups pf water.

10. Mix well and bring to the boil in high heat.

11. Reduce the heat to medium low, cover and let it simmer for 15 minutes.

12. Add juice extracted from 30 grams tamarind and cook for 4 minutes. 

13. Add the fish Let it cook for 5 minutes.



14. Add ½ cup coconut milk and cook for 3 minutes.




15. Taste for seasoning and adjust.

15 grams green chili, sliced into thin pieces

3 pieces (2 inch) lemon grass. Use only the soft bottom part.
10 curry leaves, chopped
5 inch piece of pandan leaf
½ cup coconut milk

Spices
½ tsp cumin seeds

3 cups water

Preparation
Add salt and turmeric to the fish and coat well. Let it marinate for about 20 minutes.

Method
