Butternut Pumpkin stew with other vegetables without adding water |
Butternut squash (Cucurbita moschata) is known in Australia and New Zealand as butternut pumpkin or gramma, and "Batana" in Sri Lanka. It has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. It is available in the market all the year round.
Butternut squash has many vital poly-phenolic anti-oxidants and vitamins. It has more vitamin A than that of in pumpkin..It is cooked like pumpkin. Today I am going to make a very simple stew using it.
I used a laborious process to make this stew without adding water but using only the water from the vegetables. You can simplify the cooking by adding all the ingredients, except, oil, salt, pepper and 2 cups of water and boiling it for 25 minutes in medium heat. Add salt and pepper last. Leave out the oil altogether.

1. Wash 750 grams butternut Pumpkin (butternut squash), peel and remove the seeds. Cut the it into ¼ inch or ½ inch cubes.
2. In a large pan or wok add the 3 tsp vegetable oil and heat it.
3. When the oil is hot add ½ tsp cumin seed and ½ tsp fennel seed and fry for 30 seconds or till the splutter. Reduce the heat to medium low.
4. Add 150 grams onion, coarsely chopped and fry for 3 minutes.
5. Add 6 shallots, peeled, whole and fry for 2 minutes.
6. Add 1 cm ginger, minced and 6 cloves garlic, peeled whole and fry for 2 minutes
7. Add 164 grams carrot, slice into small pieces and stir once and cover the pan. Cook for about 5 minutes.
8.Add 135 grams potato, sliced into small pieces cover and cook for 5 minutes.
9. Add 124 grams celery, sliced into small pieces and 1 bay leaf and cook for 3 minutes
10. Add 192 grams sweet corn, slice into small pieces and fry for 3 minutes.
11. Add 430 grams cauliflower, slice into small florets and cook covered for 3 minutes
12. Add butternut squash pieces and cook covered for 10 minutes or until it becomes soft.
13. If the pan is dry one or two table spoon of water. Add more water if you want the stew to be little watery. I did not add any water.
Add 1 tsp salt and 1 tsp pepper. Mix well.
14. Taste for seasoning and adjust.
