Angel hair Spaghetti with salmon and kale.
Preparation time: 30 minutes
1. In a medium size bowl, add 300 grams salmon filet, sliced to desired sizes, 1/2 tsp chili powder, 1 tsp turmeric powder, 1/2 tsp salt, and 1/2 tsp pepper powder 1 tsp vegetable oil and mix well. Let it sit for 20 minutes.
2. Fry the salmon slices in an air-fryer for 15 minutes at 180ºC, shaking once mid-way.You can also fry in a skillet for about 15 minutes. The fish should be lightly crispy but soft. Set aside the fried salmon.
3. Boil the spaghetti according to the instruction on the packet.
In a big pot, add 2 1/2 liters of water. Add 2 teaspoon salt (or to taste) and 1 tablespoon vegetable oil Bring to a boil.
4. Then add the 250 grams spaghetti (I used San Reno short cut angel hair) and reduce the heat to medium and cook for 10 minutes or until it becomes 'Al Dente" - still firm when bitten and not soft.
Strain and discard the liquid. Set aside the spaghetti.
5. In a large skillet (I used a wok), add 2 table spoon of olive oil. Heat it up. When the oil is hot reduce the heat to medium and add 100 grams onion, coarsely chopped and 1 green chili, thinly sliced and fry for 10 minutes or until the onion pieces become translucent.
6. Add 50 grams purple cabbage, chopped, 50 grams snow peas, chopped, 50 grams sweet beans, chopped.
7. Add 50 grams yellow bell pepper, chopped into small cubes and 1/2 tsp salt and fry for 10 minutes, stirring frequently.
8. Add 100 grams kale, chopped.
9. Add the cooked pasta and stir well. This step will also reheat the pasta.
10.Add white sauce and mixed with grated cheese as you wish.
Remove from the heat.
The pasta is ready. Serve immediately with fried salmon pieces on top.
