In Asian cooking fish is usually cooked with a sour ingredient. Today I have chosen to use unripe tomato as the sour ingredient. Unripe tomato will give a slightly sour taste. Many people use ripe tomato. Unripe tomato will give a different taste experience.

Cooking time: 30 minutes
Serves: 4

1. Marinate 400 grams cod fish with  ¼ tsp turmeric powder
¼ tsp salt, ¼ tsp chili powder and keep aside.

2. wash and cut green tomato into wedges.

3. In a large pan heat 2 table spoon oil. When the oil is hot reduce the heat to low and add add dry chili followed by 1 lemon grass peeled and cut into 3 pieces and 1 piece pandan leaf (screw pine leaf) and fry for 1 minute.


4. Add 1 tsp cumin seeds, ½ tsp fennel seeds and 1 tsp fenugreek seeds fry for 10 seconds.

5. Add 1 chopped green chili pieces,  4 chopped garlic, 10 curry leaves, and fry for 2 minutes.. Add 1 chopped green chili pieces, 
 and fry for 2 minutes.



6. Then add 100 grams chopped onion and fry for 6 minutes.


7. Add 260 grams green tomato and fry for 3 minutes

8. Add 1 tbsp curry powder and 1/2 tsp garam masala.


9. Add  4 cups water mix well and bring to the boil in high heat.

10. Reduce the heat to medium low, cover and let it simmer for 15 minutes.

11. Add the marinated fish pieces, tamarind juice 
 extracted from 50 grams tamarind,according to your taste and simmer for 8 minutes


12. Add salt, 1/2 tsp pepper powder, add 1/2 cup coconut milk and cook for 3 minutes.

Taste for seasoning and adjust.

260 grams unripe tomato, cut into wedges

100 grams onion, coarsely chopped
1 lemon grass, 3 inch bottom white, discard after cooking
1 pandan leaf, 5 inch size, discard after cooking
1 green chili, sliced thin
1 dry chili, broken into two
4 garlic cloves, sliced
10 curry leaves
50 grams tamarind, juice extracted
2 tbsp vegetable oil of your choice
½ cup coconut milk
4 cups water

Preparation

Add green chili pieces, garlic, curry leaves, and fry for 2 minutes, stirring frequently to ensure that they do not get burnt.

Then add onion and fry for 6 minutes.
