This is a popular snack in Asia.  I am using tuna because I like it, but you can use any kind of canned or fresh fish. If you want to make vegetarian rolls, you can omit the fish and increase the quantity of potatoes. It will still taste good. You can also add boiled chick peas or green peas to the potatoes.

1. Flake 270 (2 cans) grams  canned tuna fish
2. Boil 125 grams potato mash and mix with the fish.

3. Fry  chopped 150 grams onion,curry leaves  chopped  1 finely cut chili, finely cut 4 cloves garlic and 4 grams  finely cut ginger lightly.

4. Add 1 tsp pepper powder, 1 tsp garam masala,1 tsp cinnamon powder,1 tsp roasted cumin powder to the fish and potato mixture and add to the onion mixture in the pan and fry for 6 minutes.  keep aside to cool.

1. make the batter with 1 cup all white flour, 100 grams milk powder, 1 egg  ½ tsp salt and ¾ cup water.

2. Heat the pan.When the pan is hot pour one ladle of the pancake mixture and swirl the pan to spread the mixture into a thin layer. 


3. Place one or two tbsp spoonful of fish mixture on a hot pancake cover and roll it.

1. Make another batter with 1/2 cup  flour 1/4 tsp salt and 1/4 cup water.

2. Dip the roll in the batter and coat with bread crumbs

2 cup water
1 egg
50 grams full cream milk powder
1 tsp salt

1 cup flour 
100 grams full creme milk powder 
¾ cup water
½ tsp salt

Ingredient for  final coating 
250 gr  Bread crumbs
1/2 cup flour
1/3 cup water 1/4 tsp salt

Ingredients for the stuffing
2 cans tuna fish
150 grams onion
1 green chili
4 cloves garlic
4 grams ginger
15 curry leaves
1 tbsp vegetable oil
Spices
1 tsp pepper powder
1 tsp garam masala
1 tsp cinnamon powder
1 tsp roasted cumin powder

Preparation
Remove the fish pieces from the can. Discard the liquid – brine or oil. Rinse the fish. Dry it in a paper towel. Use a fork to pull the fish into flakes.

Next step is to boil the potato. Potato is our binding agent. We are going to lightly mash it.

 You can use any method of boiling the potatoes. I normally microwave the potatoes with two table spoon of water for 3 minutes and turn the potatoes and cook for another 3 minutes. To test whether the potatoes are cooked, insert a fork and if the fork goes in smoothly, it means the potatoes are cooked. Let the potatoes cool and peel them and cut into small pieces. Lightly mash the potatoes with a spoon leaving small pieces. Mix the mashed potato with the fried fish.

In a medium sized frying pan or a wok heat 1 table spoon of vegetable oil of your choice. Fry onion for about 5 minutes. Add chili, garlic, ginger and curry leaves and fry for another 3 minutes.

Add flaked fish mixed with potato, pepper powder, garam masala powder, cinnamon powder cumin powder,salt and fry for 6 minutes in low heat. Take the pan off the heat and set it aside to cool.

Method
Next step is to make the pancakes. In a medium sized bowl add flour. Add egg, milk powder, salt and water. Whisk the ingredients briskly to form a smooth batter without any lumps.
I did this in the liquidizer.

Grease a frying pan. And put it on a medium heat. When the pan is hot pour one ladle of the pancake mixture and swirl the pan to spread the mixture into a thin layer. You can also spread it with the back of a spoon.  In about 2 minutes the flip the pancake over after two minutes. Cook for another two minute and take out the pancake from the pan and place it in a plate.

Now we will make the rolls. using the fish mixture

When the pancake is hot put one to two tablespoon of fish mixture on a side of the pancake.

Cover it with one end of pancake

Tuck both ends in to cover the mixture inside.

 Roll all the pancakes.

Leave aside in a plate.

Repeat this process until all the pancake mix is used up.

Next we will prepare the batter for coating the rolls. In a medium sized bowl and wheat flour, salt and water. Whisk briskly to get a runny, lump free batter.

One by one dip the rolls in the batter and thin coat with the bread crumbs.

Now we are ready to fry the rolls. We need to deep fry them. Heat one cup of oil in a frying pan in medium high heat. Fry the rolls in batches until they are brown. It will take about 2 minutes on each side.

That is it. The snack is ready for the evening tea. you will not feel sorry for a long process when you taste the rolls.


I fried some rolls in the air fryer to avoid too much oil. I fried 4 rolls in 200 degrees.I preheated for 10 minutes. Fried for 10 minutes and then 5 minutes and another 5 minutes
