Garlic scapes with cabbage and carrot


Garlic scapes are the soft, lime-green-colored stems and unopened flower buds. Scapes have a mild garlic flavor and a slight sweetness. Scapes are aromatic and you can use them to add flavour to your dishes. Scapes also work well as a vegetable. Today I am going to make a stir-fry of scapes with cabbage and carrot.

1. In a large pan a heat 2 tbsp vegetable oil. When the oil is hot reduce the heat to low add 1 dry red chili, broken into small pieces, then 75 grams onions, coarsely chopped, and fry for 6 minutes.

2. Add ½ tsp fennel seeds and ½ tsp cumin seeds fry for 10 seconds.

3. Add 1 green chili, chopped fine, 1 red chili, chopped fine, 3 garlic cloves, sliced, 10 grams ginger, grated and 10 curry leaves, chopped. 

4.Fry for 5 minutes, stirring frequently to ensure that they do not get burnt.

5. Add 250 grams garlic scapes, cut into ¼ " long pieces and 1 cup water. 

6. Cover and simmer for 10 minutes. If you want the garlic scapes to be crunchy just stir fry with little water and add 150 grams cabbage, julienned.

7. Add ½ tsp turmeric powder and stir.

8. Add 150 grams carrot, julienned, continue. frying for 5 minutes.

9. Add ½ tsp black pepper powder and ½ tsp salt and ¾ cup Coconut milk and cook for 2 minutes.

10.Taste for seasoning and adjust.

Method
