Buy baby kai-lan, I mean young kai-lan. Kai-lan has a strong taste. It is also slightly bitter. Young kai-lan has a relatively milder and less bitter taste. Hence I am using baby kai-lan instead of mature one.
The ingredients used in this recipe will remove the bitterness and will give it a pleasant taste. Even the mature kai-lan will taste good with these ingredients.

Preparation time: 15 minutes
1. Soak 100 grams dried brown beans over night and boil for 30 minutes and leave it in a strainer to dry.
2. In a large pan heat 2 tbsp oil. When the oil is hot, reduce the heat to low add 1 dry chili.
3. Then add 1 onion, chopped, and fry for 8 minutes, stirring frequently.
4. Add one red and one green chili pieces,sliced thin; 4 garlic cloves, sliced; and 5 grams ginger, grated.
5. Fry for 1 minute, stirring frequently to ensure that the ingredients do not get burnt.
6. Add ½ tsp cumin seeds, ½ tsp fennel seeds and fry for 10
seconds.
7. Add 250 grams kai-lan, chopped and fry for 5 minutes, stirring frequently.
8. If it is dry at this stage add half-a-cup of water.
9. Add boiled brown beans and fry for 2 minutes.
10. Add 75 grams grated coconut and fry for 2 minutes.
11. Add 1/2 tsp salt and 1/2 tsp pepper powder and stir.
12. Fry for 1 minutes.
13. Taste for seasoning and adjust.

Add cumin seeds, fennel seeds and fry for 10 seconds. You can add cumin and fennel seeds with the dry chili but must take care not to burn.

Add Kai-lan and fry for 5 minutes, stirring frequently.
If it is dry at this stage add half-a-cup of water.
Fry for 1 minutes.
Taste for seasoning and adjust.
The dish is ready. This is a filling dish. It can be served as a side dish or served with rice.
