According to the University of Maryland Medical Center, in the U.S. and Europe gotu kola is most often used to treat varicose veins and chronic venous insufficiency, a condition where blood pools in the legs. It's also used in ointments to treat psoriasis and help heal minor wounds. The Medical Center cautions that people with liver conditions and those who take medications that affect the liver should avoid gotu kola. 1. A bundle of Gotu Kola is about 100 grams. Pluck only the leaves and discard the stems. Soak the leaves in salt water for 15 minutes. Let the leaves dry on a paper or kitchen towel. Chop as desired.
2. In a medium size bowl mix 90 grams finely chopped onion, 1 finely chopped green chili, 1 finely chopped red chili (optional) and 1 carrot julienne d. Add 100 grams shredded coconut, ½ tsp salt and juice from ½ a lemon and mix well. I add carrot to give a bit of sweetness to the salad and to counter the bitterness of gotu kola.

Preparation
