1. Soak 100 grams split chickpeas in water at room temperature for 3 hrs and boil till its soft. Drain and set aside. It may take about 15 minutes on low heat.
2. In a medium sized sauce pan or wok heat 1 tbsp oil and add boiled chickpea fry for a minute in low heat. I boil the chickpea as it will be soft after frying.
3. Add 25 grams peanuts and 25 grams cashew nuts, broken into small pieces, and fry till its done. keep aside.
4. In the same pan or wok add 50 grams thinly sliced leek, 1 thinly sliced green chili, 1 thinly sliced red chili (optional) 10 curry leaves, cut into small pieces and fry for a minute. Add oil if necessary.
5. Add 50 grams coarsely chopped onion (1 medium), 150 grams thinly sliced cabbage, 70 grams carrot (julienne), and fry for about 10 minutes or till it is done. Stir frequently. When done wait till the rice is ready.
6. Wash 2 cups rice and add to the rice cooker. Add 4 cups of water, ½ tsp turmeric powder and 1 tsp salt. Mix well and add one table spoon butter or ghee and switch on the cooker.
7. The rice will be ready in 25 minutes. As soon as the rice cooker goes off, use a ladle or the ling handle of a spoon to stir the rice once. This will prevent the rice grains from sticking to each other and forming a lump.
8. Add the rice to the vegetable fried vegetable mixture and stir fry well. Squeeze one whole lemon or to your taste and mix well. Add the fried nuts and stir.
9. Serve while the rice is hot. Serve with curry or soup or yogurt.or just by itself.
