This is simple curry with only a few ingredients. Egg is the main ingredient. It is easy to make.  It will be liked by all, especially the younger ones.  Now we know that we need some saturated fats for the normal bodily functions. Let not the cholesterol in the egg scare you.  If consumed in moderation egg is a healthy food.

1. Boil 3 eggs to be hard – about 10 minutes in high heat. Let it cool in cold water. Shell the eggs and cut them into halves.

2. Soak 15 grams tamarind pulp in a quarter cup of warm water for 5 minutes. Massage the pulp a few times and squeeze out the juice. Strain it and set it aside. First you add only about ½ to ¾ of the juice. Add the balance after tasting and if necessary.

3. In a small bowl soak 4 dry red chilies in hot water for about 10 minutes. Drain the water and set the soaked chilies aside.

4. In a liquidizer add soaked chilies, 45 grams coarsely chopped onion, 4 cloves thinly sliced garlic,  and 7 grams finely chopped ginger, 1 tsp salt and tamarind juice. Grind into a smooth paste. Set the chili paste aside.

5. In a large frying pan or saucepan add 2 tbsp vegetable oil and heat up. When the oil is hot reduce the heat. Add ¼  tsp mustard seeds and let it crackle and add ½ tsp cumin seeds fry for 30 second add ¼ tsp fenugreek seeds and fry for another 30 seconds. See that it does not burn.

6. Add 45 grams onion and 1 thinly sliced green chili and fry for 5 minutes. To speed up frying you can add a pinch of salt.

7. Add the chili paste and fry for 5  minutes. 

8. Add 1½ cup water  and 10 curry leaves. Bring to boil and let it simmer till the chili smell leaves.

9. Add ¼ cup coconut cream and ½ tsp pepper. Taste for seasoning

10. Add the egg slices and cook for 5 minutes .Stir carefully now and then for the masala to be absorbed.

11. The curry will be almost dry without any watery gravy.  The thick paste gravy will be very tasty.

12. Take the curry off the heat. It is ready for serving. It will be a tasty dish with a fried rice. The prepared masala with dry chili, tamarind and salt gives a wonderful taste. Hope you will try and enjoy.

1 tea spoon salt

Add onion and green chili and fry for 5 minutes. To speed up frying you can add a pinch of salt.
