Today we hear people talking about probiotics. This probiotics are also available in the form of pills and tablets. But the easiest way of getting this is from yogurt, which is probiotics. Typically homemade yogurt will have Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. If you use a high quality starter the yogurt will have additional strains of beneficial bacteria.

Sometimes commercial yogurts are heat-treated or pasteurized after production. These processes destroy all the beneficial bacteria in the yogurt.

Yogurt contains "live and active cultures" which our ancestors had known for hundreds of years. They consumed yogurt with sugar, honey, fruits, rice and curry. They also made refreshing drinks by diluting yogurt with water.

They also had known this simple rice dish made with yogurt.

Today this yogurt rice may include numerous ingredients such as vegetables, fruits like pomegranate, mango, and berries and nuts like peanut, cashew nuts. Today I am going to make yogurt rice with some mixed vegetables and accompanied by coriander sauce.

1. Dry roast 1 table spoon split mung been seeds uncovered in a microwave oven for 1 ½ minutes high or in a frying pan. After roasting, boil mung bean with 1 cup of water and ¼ teaspoon turmeric powder in slow fire for 15 minutes or until the mung bean is soft. By this time mung bean will be almost dry. But if there is excess water drain and keep aside.

2. Cook 50 grams frozen vegetables peas, carrot and corn in a microwave oven for 1 minute. Cook 1 grated carrot in the microwave oven for 2 minutes.

3. I cooked the rice in rice cooker. Add 1 teaspoon salt, 2 cups rice, 6 cups of water for the rice to be very soft. When rice is cooked, add ½ cup fresh full cream cold milk when the rice slightly warm. You can add hot milk too.

4. When the rice is completely cool add the cooked vegetables, chopped 10 grams ginger, boiled mung bean to the rice and mix well. If you like you can add raw grated carrot. finely chopped skinned cucumber.

5. Add 1 table spoon oil to pan and temper ½ teaspoon mustard, ½ teaspoon cumin, 1 chopped green chilli, few chopped curry leaves. Mix to the rice. You can leave out green chili and curry leaves.



Add ½ cup low fat yogurt and ¼ cup Greek yogurt
yogurt.  It’s done.

Ingredients
Main
2 cups rice
½ cup low fat yogurt
¼ cup Greek yogurt
½ cup fresh full cream milk
Others
6 cups water to cook rice
1 teaspoon salt
10 grams ginger grated
50 grams frozen mixed vegetables (peas, carrot and corn)
1 carrot grated
1 green chili chopped (optional)
Few curry leaves finely chopped (optional)
1 Table spoon oil for tempering

I tablespoon split mung bean
1 cup water to boil the beans
Spices
½ teaspoon mustard seeds
½ teaspoon cumin seeds
¼ teaspoon turmeric

Note:
I am using two types of yogurt. Each of them has a distinct taste. Combined they give a favourable taste to the finished dish.

Cook the frozen vegetables in a microwave oven for 1 minute. Cook the grated carrot in the microwave oven for 2 minutes.

Method
I cooked the rice in rice cooker. Normally you add 4 cups of water for 2 cups of rice. I added 2 more cups of water (total of 6 cups of water) for the rice to be very soft.. When rice is cooked, add milk and keep aside. Add cold milk when the rice slightly warm. You can add hot milk too.

When the rice completely cool add the cooked vegetables, chopped ginger and mung bean to the rice. Mix well. If you like you can add raw grated carrot. You can also add finely chopped skinned cucumber.

Temper mustard and cumin, green chilli, curry leaves. Mix to the rice. You can leave out green chili.

Add yogurt.  It’s done.

You can serve the rice with coconut and chilli dips too. But this can be eaten without any accompaniment  It is pleasant to eat  It is a cool and mild rice.
