Serves : 4
                             
1. In a large saucepan bring the water to the boil add 1 tsp salt, 1 tsp olive oil and add 150 grams spaghetti and give a stir. The water should cover the spaghetti. Continue to cook uncovered in medium heat for about 45 minutes or until the spaghetti becomes al dente. Drain the spaghetti and set aside.

2.Soak 200 grams broccoli immersed in salt water for about 10 minutes to get rid of bacteria and invisible insects in the flower. Cut the broccoli into small bite-sized florets. Put the florets into a microwaveable dish and add 1 table spoon of water. Microwave broccoli florets on high for about two minutes. Stir the florets couple of times and the microwave again for 1 minute.You can also blanch broccoli in boiling water instead of using microwave.
In a small frying pan add 1 tablespoon of butter and melt it in medium heat. Add the broccoli florets and stir well to ensure butter coats the florets well.. Sprinkle 1/8 tsp pepper and ¼ tsp salt and stir again and take off the heat. The whole stir-frying process will take only 2 minutes.

3. Cut and debone the baked chicken and cut the flesh into medium sized chunks.
 In a medium sized sauce pan add 1 tbsp butter and melt it and add 1 teaspoon of vegetable oil. Add 1 onion chopped fine and 3 cloves garlic minced and fry for 7 minutes. Add the chicken pieces and fry for 5 minutes stirring well. Add ¼ teaspoon of pepper and ½ teaspoon salt only if required. I had used pepper and salt when baking it. Add 1 teaspoon dried rosemary flakes. Chicken is now done.

4. Melt 2 tsp butter in a medium saucepan over low heat and add 1 tsp olive oil. Stir in 3 tbsp flour and whisk briskly to form a paste. Add in 1 cup milk and stir. Adding warm milk and broth will help prevent lumps forming in the sauce. Add in 1 cup warm broth and stir. Bring to a boil and lower the heat. The sauce will slowly begin to thicken while you keep stirring. Keep stirring until the sauce comes to your desired thickness. This will take about 5 minutes. Add ½ cup Parmesan / Mozzarella cheese and ½ tsp salt,1/8 tsp pepper,
1 tsp Italian seasoning, ½ teaspoon of chili flakes (optional) and cook for 2 minutes to let the cheese melt and blend with the sauce. The sauce is done. 

5. Serve the spaghetti in individual plates add chicken and cooked broccoli florets

Today I am using a chicken that I had baked before and frozen it. Cut and debone the chicken and cut the flesh into medium sized chunks.
 In a medium sized sauce pan add the butter and melt it and add 1 teaspoon of vegetable oil.
Add the onion and garlic and fry for 7 minutes. Add the chicken pieces and fry for 5 minutes stirring well. Taste for seasoning and add pepper and salt only if required. I had used pepper and salt when baking it. Adding a little bit of salt and pepper will brighten up the chicken. Chicken is now done.

Preparation of spaghetti

1/8 teaspoon pepper
1 teaspoon Italian seasoning
