Mild Plantain Curry |

Plantain belongs to the same family as banana. Banana is consumed as a fruit when ripe. Ripe banana can be fried after dipping in batter and it will make a tasty snack. Plantain can be found in the fresh produce section of the super markets and are used in cooking. Plantain has a slightly thicker skin than banana. Plantain chips are commercially available.

Today I am going to make a mild curry. This is a very simple curry and it is easy to make it. This curry is dry without any gravy.

Preparation time: 30 minutes
1. Peel the outer skin of 2 plantains with a potato peeler. Leave the inner green skin intact. Slice the plantain into ¾ inch cubes. Put them in salted water.
2. Strain the plantain cubes and put in a medium sized sauce pan and add enough water to cover the plantain.
3. Add 1 onion chopped coarsely, 10 curry leaves, 3 cloves garlic sliced thinly, 1 green chili seeded sliced thinly, ½ inch ginger shredded, 1 teaspoon coriander powder, ¼ teaspoon ¼ teaspoon
turmeric, 4 pepper corns, cumin seeds, and ¼ teaspoon fennel seeds.
4. Put the pan on the stove and bring to a boil and the lower the heat to medium and let it cook lightly covered for 15 minutes.
5. when the plantain pieces are soft add ½ teaspoon salt, 1/8 teaspoon black pepper powder and ½ cup coconut milk and continue to cook uncovered for another 2 minutes.
Switch off the heat. By now most of the water would have evaporated. If there is little water left in the pan don’t worry the plantain will absorb it in a little time.
The mild plantain curry is ready.

Preparation
Use gloves when handling plantains. Plantain stains your hand. This stain poses no health hazard to the skin and it can be washed away. Peel the outer skin of the plantain with a potato peeler. Leave the inner green skin intact. Slice the plantain into ¾ inch cubes. Put them in salted water.
Method
Strain the plantain cubes and put in a medium sized sauce pan and add enough water to cover the plantain. Add all the ingredients except the last three.
Put the pan on the stove and bring to a boil and the lower the heat to medium and let it cook lightly covered for 15 minutes. By this time most of the water would have evaporated and the plantain pieces will be soft. Now add salt, pepper and coconut milk and continue to cook uncovered for another 2 minutes. Switch off the heat. By now most of the water would have evaporated. If there is little water left in the pan don’t worry the plantain will absorb it in a little time. The curry is ready and can be served with rice or bread.
