Fried rice is a popular dish that is enjoyed by all. Children love it. It is found in all countries and in many varieties probably influenced by local taste. Today I am going to make fried rice with moringa leaves.

Serves: 4

1. Shell and marinate 125 grams  prawns with 1/4 teaspoon of salt and 1/8 teaspoon of turmeric powder. Set it aside for 10 minutes.

2. Fry the prawns using two tablespoons of vegetable oil in a frying pan or a wok for 10 minutes till the prawns turns into a golden color.

3. Beat the two large eggs with 1/4 teaspoon of salt and 1/8 teaspoon black pepper powder. Fry the beaten eggs in a frying pan with one tablespoon of vegetable  oil. Slice the fired egg into ¼ inch cubes and set aside.

4. Heat a large saucepan or a wok with two tablespoon of vegetable oil and when the oil is hot add 1 onion chopped coarsely onion and fry in low heat for about 10 minutes.

5. Add 1 green chili seeded sliced thinly, 1 inch ginger chopped fine and 150 grams moringa leaves and fry for 2 minutes.

6. Add 4 cups  cooked rice and stir well so that all the ingredients and moringa leaves will be evenly distributed in the rice. Add the fried prawns and fried eggs and mix well. 

7. Add 1 tablespoon of sesame oil to give fragrance to the fried rice. 


8. Add 1 tablespoon of fish sauce. If you prefer, you can replace fish sauce with soy sauce. Continue to cook for 2 minutes. Taste for seasoning and adjust. Switch off the heat.

 The Moringa fried rice is ready.

The fried rice a complete and can be taken on its own. You can also serve it with fried chicken or fried fish. It will also go well with any curry of your liking.

Ingredients

150 grams moringa leaves

1 onion chopped coarsely
1 green chili seeded sliced thinly
1 inch ginger chopped fine
1 tablespoon sesame oil
5 tablespoon vegetable oil
1/teaspoon black pepper powder
1 tablespoon fish sauce
½ teaspoon of salt

4 cups cooked long grain rice. (Preferably left over rice from the rice rather than freshly made rice)

Beat the two eggs with 1/teaspoon of salt and 1/teaspoon black pepper powder. Fry the beaten eggs in a frying pan with one tablespoon of vegetable oil. Slice the fired egg into ¼ inch cubes and set aside.
