Today I am going to make a spicy soup with beef balls together with silken tofu which is uncommon. Beef is a red meat. We do not consume often as chicken. I have written many chicken recipes. To make a difference I tried beef ball with silken tofu.

Serves: 3

1. In a large pan heat 2 table spoon of oil. When the oil is hot, reduce the heat to low and add 150 grams onion, coarsely chopped and fry for 5 minutes.

2.Add 4 cloves garlic, sliced and 20 grams ginger, finely Add garlic and ginger fry for 1 minute, 

3.Add 100 grams celery and fry for 5 minutes.

4.Add 1 tsp broken chili flakes and fry for 1 minute.

5.Add 250 grams beef balls and stir fry for 3 minutes.

6.Add 150 grams cabbage pieces and fry for 5 minutes.



7.Add 1 cup chicken stock  stock and 2 cups of water. Bring to the boil in high heat.

8.Add ½ tsp salt, crushed cumin and pepper powder crushed together from ½ tsp cumin seeds  ½ tsp pepper and cook for 5 minutes. You can crush pepper and cumin in a mortar and pestle or grinder coarsely.

9. Add 200 grams silken tofu and oyster sauce. Reduce the heat to medium and simmer for 5 minutes.

10. Add 1 tbsp soy sauce.

11.Add 1 tbsp oyster sauce. 

12. Add 1 tbsp corn starch, dissolved in 3 tbsp water and stir.

13. sprinkle a few coriander leaves.

The beef ball soup is ready. Serve while it s still hot.

 There are many regional variations of stew. I used a 6 weeks old young chicken. I added some rice to the stew. It is a one-dish meal. This is an easy recipe and takes very little time.

Preparation time: 15 minutes
Cooking time: 30 minutes
Serves:4

1.Marinate  cleaned 1 kg chicken with 1/2 tsp turmeric 1/2 tsp  salt   1 tsp pepper mix  1 tbsp white flour.

2. Peel and cut 150 gram potato, and 150 grams carrot into bite size pieces.

3. Clean 100 grams asparagus and remove the hard part.

4. clean and cut 100 grams celery into bite size pieces.


5.In a large stock pot or a pan add 3 tbsp oil and heat it up. Reduce the heat to medium add the chicken and fry for 5 minutes. Remove and keep aside.  

6. Add the 150 grans chopped onions and saute for 5 minutes.

7. Add chopped 4 cloves garlic and finely cut 15 grams ginger and fry for a minute.

8. Add 1 tsp fennel seeds and fry for a minute.

 9. Add carrots, potatoes, asparagus,and celery  and saute for 3 minutes.

10. Add the fried chicken and mix well.

11. Add the 2 cups chicken broth, 750 ml water and cover. Bring to  boil and simmer for 10 minutes  to cook chicken and vegetables. 

12. Add 2 cups cooked rice and simmer for 5 minutes. 

13.  Add the canned country style mushroom chicken soup and simmer for another 3 minutes. Taste for seasoning and adjust.

Method

In a large stock pot or a pan add the oil and heat it up. Reduce the heat to medium add the chicken and fry for 5 minutes. Remove and keep aside

Today I am going to use egg noodles for my dish.Egg noodles are different in taste from  Maggie noodles.

1.Cut the 300 grams chicken breast into bite size pieces. Coat with 1 teaspoon chili powder,  ½ tsp turmeric powder,  ½ tsp salt Keep it aside for 20 minutes,

2.Boil 240 grams noodles in water for three minutes. Drain and set aside.

3.Heat 2 Tbsp oil vegetable in a pan. When it is hot reduce the heat to medium and add 150 grams onion and 30 grans green chili and saute for 5 minutes.

4.Add  4 cloves garlic and  Saute for 2 minutes. 


5.Add crushed 1 Tb spoon crushed chili flakes and stir.

6.Add chicken and saute for 10 minutes. 

7. Add 1 cup chicken stock  Bring to the boil and simmer for 5 minutes or till the chicken is cooked.

8.  Add 150 grams Bok choy and saute for two minutes.

9. Add 100 grams capsicum and stir.

10. Add the noodles, 1 Tbsp light soy sauce, 1 Tbsp fish sauce and salt  and stir well and cook for 2 minutes.

Preparation
Cut the chicken breast into bite size pieces. Coat with chili powder, turmeric powder ans salt. Keep it aside for 20 minutes,

Boil the noodles in water for three minutes. Drain and set aside.

In a large pan or a wok heat the oil. When the oil is hot reduce the heat to medium and add onion and saute for 5 minutes or until it becomes translucent.  Add green chili.
