Roast chicken makes a good filling for a baguette sandwich. I used a chicken which I had roasted earlier.

Ingredients:
Roast chicken |
1 kg roast chicken
1 baguette, bought from bakery
150 grams potatoes
2 avocados
150 grams salad leaves
1 tomato
Others
150 grams onion, chopped fine
½ lemon, juice squeezed
1 green chili, cut into small pieces
1 red chili, hot, optional
1/2 tsp pepper powder
100 grams Greek yogurt
1 tsp salt

Preparation
In a microwave oven safe dish, add the potatoes and 1 table spoon of water. Cook it cover in the microwave oven for 3 minutes. Turn the potatoes once and cook for another 3 minutes. Take the potatoes out and keep it for 10 minutes to cool. Peel off the skin and dice or mash the potatoes.
Cut the chicken into big pieces and pull the flesh with a fork.

Cut the avocados and take out the flesh. Please see this recipe for details. Add lemon juice immediately to prevent discoloration of the avocado.
Method
We have to assemble the sandwich now.

Mix chicken, avocado, potato, yogurt, green chili, red chili, pepper powder and salt. Mix the ingredients thoroughly.

Cut the baguette into suitable length. Make a slit lengthwise to put the filling. First put the salad leaves and then the filling. The sandwich is ready to eat.
