We save the essential omega 3 oil provided by salmon in this curry as the oil drips into the curry. This is a mild curry. We do not add any curry powder or chili powder. Salmon is a great source of omega-3 oil which is essential for heart health. It also reduces the blood level cholesterol.

Mild salmon gravy
1. Wash 250 gram salmon fillet in water mixed with ½ teaspoon turmeric powder and ½ teaspoon salt. This step will get rid of any fishy smell and any bacteria.
2. Marinate salmon with ½ teaspoon turmeric powder and ½ teaspoon salt to salmon. Let it marinate for half an hour. If you like you can add ½ tsp black pepper powder also.
3. In a large skillet heat 3 tbsp vegetable oil. Reduce the heat to medium.
4. Add ½ tsp cumin seeds and ½ tsp fenugreek seeds and fry for 30 seconds.
5. Add 90 grams onion, chopped, 4 garlic cloves, 5 shallots, ¼ inch ginger, grated, and 1 dry red chili, and fry for 5 minutes.
6. Add lemon grass (remove the outer layer and cut into 3 pieces); ½ pandan leaf; 1 green chili, finely sliced and 5 curry leaves and fry for 2 minutes.
7. Add 1 tomato, cut into wedges.
8. Add tamarind juice(extracted from 30 gram tamarind with seeds). In the first instance add only half the tamarind juice . Balance can be added after tasting for seasoning.
9. Add 2 cups of water; ½ tsp turmeric powder; 1 tbsp coriander powder and ½ tsp garam masala powder (optional) and cook for 10 minutes.
10. Add ½ cup coconut milk and 1 tsp salt and cook for 3 minutes.
11. Taste for seasoning and adjust.
12. Add salmon pieces, cover and cook for 10 minutes in low fire. You can add some more milk and taste.
13. Salmon in mild gravy is ready. It can be served with rice or bread.
