Today I am going to use French beans in a spicy and mild form that gives an unusual taste with the combination of green chili paste, dry prawns and tempeh. The dry prawns will add flavor to beans and
tempeh.

Preparation
1. Remove fibres from 200 grams French beans (string beans) and cut them into into 1½"long pieces.
2.Cut 200 grams of tempeh into ¾" cubes.
3. Press 200 grams of tofu to remove excess water.
4. Cut the tofu into cubes of same size as tempeh.
5. In a blender, 2 green chilies, 2 small hot green chilies (Thailand), 6 shallots, peeled, 3 garlic cloves, peeled, ¼ inch ginger, peeled and blend them into a fine paste. Set aside the paste in a small bowl.

6. In a medium sized skillet add 1 table spoon of oil. Heat the oil. When the oil is hot reduce the heat to medium and add the cut beans. Fry for about 10 minutes or till the beans are soft but still juicy. I fried them in an air fryer using ½ tsp of vegetable oil. I fried for 10 minutes at 180 degrees, stirring the beans once midway.
7. Transfer the fried beans to a bowl and keep aside.
8. In the same skillet add one tbsp of oil. Heat the oil. Reduce the heat and add tempeh.
Fry for about 10 minutes or till they become golden brown in colour. I fried them in an air fryer using ½ tsp of vegetable oil. I fried for 10 minutes at 180 degrees, stirring the tempeh once midway.
9. Transfer the fried tempeh to the bowl which holds the fried beans.
10. In the same skillet add ¼ cup vegetable oil. Heat the oil. Reduce the heat and add tofu pieces.
Fry for about 10 minutes or till the tofu becomes light golden brown in colour. I fried them in an air fryer using ½ tsp of vegetable oil. I fried for 10 minutes at 160 degrees, stirring the tofu pieces once midway.
11. Transfer the fried tofu to the bowl which holds the other fried items.
12. Wash 50 grams dry prawns and soak them in hot water for fifteen minutes. Drain and take the prawns. In a food processor grind soaked prawns coarsely. Set aside the ground prawns.
13. In a medium sized skillet add two tbsp oil and heat it. I used a wok.When the oil is hot add 1 long lemon grass, bruised.
14. Add spice paste and fry for 5 minutes.
15. Add coarsely ground prawns, fried beans, 1 tsp salt and two cups of water cook for 5 minutes. Stir well and mix.
16. Add fried tempeh and tofu and cook for 3 minutes.
17. Add juice extracted from 10 grams tamarind. Use according to your taste.
18. Add ¼ cup coconut milk and cook for 3 minutes.
19. The curry is ready. It can be served with rice or flat breads. It can be served with rice or flat breads.

Make a small slit at the top of the string
bean and pull it to remove the hard fibre found on one side of the bean. Do the
same at the bottom to remove the hard fibre from other side of the bean. Repeat
this for all the beans. Young beans will not have any hard fibre. You can avoid
this step for young beans.

water for fifteen minutes. Drain and take the prawns. In a food processor grind
soaked prawns coarsely. Set aside the ground prawns.

Method
In a medium sized skillet add two tbsp oil
and heat it. I used a wok.
