Today I am going to make a very simple salad with only a few ingredients. You can prepare the salad with English cucumber too.

Serves : 4
1. Slice and chop 100 grams cucumber. Add half a teaspoon of salt to the cucumber slices and let them rest for 15 minutes.
Squeeze out the water and rinse. Squeeze again to remove some moisture.
2. Slice 200 grams tomato (2 medium) discard the seeds and chop finely.
3. Chop 100 grams Bell pepper (½ medium) finely.
4. Chop 90 grams onion (1 medium) finely.
5. Chop 10 coriander leaves.
6. Add all the above ingredients to a salad bowl. Add 1 tsp black pepper powder, ½ teaspoon of salt, juice.of 1 lime and 1 tablespoon olive oil (optional).
7. You can also leave it in the fridge for 20 minutes to make it slightly cool.
8. I served the salad with mixed vegetable rice and soy protein (mock chicken) curry and probiotics vegetable. You can substitute lime juice with vinegar or low fat yogurt.
