Easy chicken rice with spices

This is not the Chinese chicken rice you find everywhere. This chicken cooked with rice like dum biryani. This is not a biryani but will taste as good.



Recipe summary

Serves: 4 - 6
                                                     
1. Cut 300 grams chicken breast  into small bite size pieces. Put the chicken pieces in a medium sized bowl.

2. Add ½ teaspoon turmeric powder, 1 teaspoon chili powder, ½ teaspoon salt and 1 teaspoon sesame seed oil, Mix the ingredients well so that the chicken will be evenly coated by the marinades, Set it aside for 20 minutes.

3. Cut one medium sized  potato into bite size pieces.

4. In a large saucepan heat the 2 tablespoon of vegetable oil. (I used a non-stick wok.)

5. Add 1 dry red chili, 1 small cinnamon stick (4“) broken, 5  cloves, 1 star anise and 3 cardamom pods  and fry for 30 seconds.

6. Add 1 pandan leaf cut into small pieces, 3 pieces (4”) lemon grass and fry for 30 seconds

7. Add 10 curry leaves followed by 1 tsp fennel seeds, ½ teaspoon fenugreek seeds and 1 tsp cumin seeds and fry for 30 seconds.


8. Add 90 grams onion coarsely chopped and fry for 5 minutes.

9. Add  1 green chilli chopped fine, followed by potato and fry for 1 minute.

10. Add marinated chicken and fry for two minutes.

11. Add 4 cloves garlic minced and ½  inch ginger minced. Mix well.


Spices
12. Add  1 tablespoon  biryani powder, ½  teaspoon garam masala powder, ½  teaspoon cinnamon powder, 1 teaspoon curry powder, ½ teaspoon pepper powder and ¼  teaspoon turmeric powder .Mix well and fry for 5 minutes.

13. Add 3 cups washed long grain rice to the rice cooker, pour 5½  cups water, 1  table spoon butter or ghee and ½  cup  coconut milk. If you add more coconut milk it will be tastier. Ratio can be 5:1.

14. At this point I transferred the contents of the wok to a rice cooker to complete the cooking of the rice. The rice will be ready in 25 minutes.

1 teaspoon fennel seeds
½ teaspoon fenugreek seeds

1 tablespoon  biryani powder
½ teaspoon garam masala powder
1 tea spoon curry powder
½ teaspoon pepper powder
½ tea spoon cinnamon powder(optional)
1/4 teaspoon turmeric powder


2 tablespoon of vegetable oil
1  table spoon butter or ghee

Marinade for chicken

½
 teaspoon turmeric powder

1 teaspoon chili powder
½ teaspoon pepper powder
½ teaspoon salt
1 teaspoon sesame seed oil


Preparation
Marinate the chicken with marinades shown above. Add  turmeric powder,  chili powder,  salt and  sesame  oil, Mix the ingredients well so that the chicken will be evenly coated by the marinades, Set it aside for 20 minutes.

Cut the potato into bite size pieces.

Method

Add dry chili, cinnamon, cloves, 1 star anise
 and cardamom and fry for 30 seconds.
Add pandan leaves, lemon grass and fry 30 seconds

Add curry leaves followed by fennel seeds, fenugreek seeds and cumin seeds and fry for 30 seconds.

Add onion and fry for 5 minutes.

Add marinated chicken and fry for two minutes

Add ginger garlic paste and mix well.

Add biryani powder, garam masala powder, cinnamon powder, curry powder,
pepper powder and turmeric powder.

Mix well and fry for 5 minutes.
