Red cabbage is a kind of cabbage. It is stronger and tougher than the green cabbage. Red cabbage has ten times more Vitamin A than green cabbage. It also has more Vitamin C and iron than the green cabbage.
When cooked, the red cabbage may turn blue. The color change does not affect the taste or nutrition.  Adding a little vinegar or some acidic vegetable or fruit will preserve the Purple colour even when cooked. The Red  cabbage will keep longer than green cabbage. This cabbage gives a lovely color to any dish.

Sometimes, a piece of paper soaked in red  cabbage juice can be used as a pH indicator. In neutral solutions it will turn into purple. In alkaline solutions it will show blue, green or yellow. Substance called  anthocyanin in found in red cabbage juice which enables it to react differently to acids and alkalies.

Today I am going to prepare a salad with red cabbage which not only looks colorful but also tasty and nutritious.

1. Cut all vegetables into small pieces.  Dice ginger into very small pieces so that it will be spread well with other ingredients. Otherwise, you a chew a big piece and you may not like it.


Ingredients
2. Mix the following vegetables in a bowl: 250 grams Medium red cabbage, 80 grams bell pepper (Red), 80 grams cherry tomatoes, 100 grams baby kai-lan, 60 grams sweet corn young (2), 100 grams onion, 1 clove garlic, 30 grams 1 green chili, 5 grams red chili small (2) ( optional), 5 grams ginger. Mix well.





3. Add juice from ½ lime,  ½ tsp salt, ½ tsp pepper powder and 2 tbsp  olive oil. Mix well  and serve. It is a delicious salad.
