The chili used in this recipe is not the hot variety that is used to spice up the food. This is mild variety. It is consumed as a vegetable. It is slightly hot and its heat would be like that of a bell pepper or even milder. This chili is the eastern version of banana chili or Hungarian Hot Wax (Capsicum annuum). It is about 4 to 5 inches long. In the east it is generally stuffed with fish paste and added to soups or served as a condiment to other dishes. In some parts of the east it is called curry chili.

1. Soak 50 grams dry prawns in warm water for 15 minutes. Drain and set aside.
2. Boil 30 grams jackfruit seeds, quartered lengthwise, fully covered in water in a medium size sauce pan for 5 minutes. Drain and set aside. Reserve the boiled water.
3. Boil 100 grams sweet potato pieces, peeled and cut into small cubes, fully covered in water in a medium size sauce pan for 7 minutes. Drain and set aside. Reserve the boiled water.
4. In a medium sized frying pan or saucepan add 3 tbsp vegetable oil and heat it up. When the oil is hot add 100 grams coarsely chopped onion and 1 dry chili broken into pieces and fry for 5 minutes or until the onion pieces turn into golden brown in color. The dry red chili may be almost blackened by now. It is what we want.
5. Add 3 cloves thinly sliced garlic, 5 grams finely diced ginger and 1 sprig curry curry leaves. Fry for one minute.
6. Add 40 grams sliced leek and fry for two minutes.
7. Add prawns and fry for 2 minutes.
8. Add 300 grams curry chili, cut into small pieces and fry for 5 minutes.
9.Add the left over water used for boiling jackfruit seeds and sweet potato.
10. Add sweet potato and sliced jack fruit seeds and cook for 5 minutes.
11. Add ½ tsp salt and ¼ tsp pepper powder. Taste for seasoning and adjust.
12. That is it. The curry is ready.
13. This curry can be served with rice or any kind of bread. It is a mild stir fry as I did not any chili powder or additional chili. I added dry prawn. Dry Anchovy also can used instead of dry prawns.
