Kale is a highly nutritious leaf. It is best to consume kale raw, in order to preserve its nutrition. I normally make a juice with other vegetables. Kale has a bitter tangy flavor. Cooking it makes this less noticeable. Today I am going to make a stir-fry.

Kale is a good source of vitamin C, vitamin A, vitamin K. minerals and healthy fatty acids. Chinese version of kale is known as kai-lan.

Preparation time: 20 minutes
Cooking time: 25 minutes

Serves: 4

1. Heat a medium sized frying pan or a wok and add 1 tbsp oil. When the oil is hot reduce the heat to medium, Add 1 medium coarsely chopped onion and fry for 10 minutes.

2. Add 10 curry leaves, 1 thinly sliced red chili, 1 thinly sliced green chili, 3 cloves thinly sliced garlic and 5 grams grated ginger and fry for 5 minutes.

3. Add 100 grams carrot (julienne) and fry for 3 minutes.
4. Add 300 grams coarsely chopped kale and fry for 2 minutes. Stir occasionally.

5. Add the broken chili (2 dry chili) and  stir for 2 minutes.


6. Add 1 tsp soy sauce, and ½  tsp salt and fry for another 3 minutes. If the pan is dry add a tablespoon of water at a time.


7. The stir-fry is ready. You can serve it as a side-dish or serve with rice or bread

1 red chili sliced thin
1 green chili sliced thin
3 cloves garlic thinly sliced
5 grams ginger grated
2 dry chili crushed
½ teaspoon of salt
1 teaspoon of soy sauce
1 tablespoon of oil

Method
