Spicy kale stir-fry with carrot and broken chili
Kale is a highly nutritious leaf. It is best to consume kale raw, in order to preserve its nutrition. I normally make a juice with other vegetables. Kale has a bitter tangy flavor. Cooking it makes this less noticeable. Today I am going to make a stir-fry.
Kale is a good source of vitamin C, vitamin A, vitamin K. minerals and healthy fatty acids. Chinese version of kale is known as kai-lan.

Ingredients
Main
300 grams kale chopped roughly
100 grams carrot (julienne)
Others
1 medium onion – chopped roughly
10 curry leaves – finely chopped
1 red chili sliced thin
1 green chili sliced thin
3 cloves garlic thinly sliced
5 grams ginger grated
2 dry chili crushed
½ teaspoon of salt
1 teaspoon of soy sauce
1 tablespoon of oil
Method
Heat a medium size frying pan or a wok and add oil. When the oil is hot reduce the heat to medium, Add onions and fry for 10 minutes.
Add curry leaves, red chili, green chili, garlic and ginger and fry for 5 minutes.
Add carrot and fry for 3 minutes.
Add kale and fry for 2 minutes. Stir occasionally.
Add the broken chili and stir for 2 minutes.
Add soy sauce, and salt and fry for another 3 minutes. If the pan is dry add a tablespoon of water at a time.
The stir-fry is ready. You can serve it as a side-dish or serve with rice or bread.
