Red spinach has round thick green leaves with red in the center. The leaves are tender. The red spinach is very much like the green spinach (also known as round spinach) and is cooked like the normal spinach. It is a nutritious and tasty dish. It is a nutritious and tasty dish. Spinach is loaded with goodness for all parts of the body. It is rich in niacin, zinc, protein, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese.
I make this green curry using any of the two spinach variety twice a week for lunch.

Preparation

1. Use 2 bundle (500 grams) of spinach. Cut off 2 inches above the roots and discard. Chop into big pieces.

Method

2. In a medium sized sauce pan add the spinach, 1 coarsely chopped onion, 1  sliced green chili, 1 sliced red chili , 3 cloves garlic, 10 curry leaves and 1 cup of water. You don't have to cover all the green leaves with water.

3. Bring to the boil. Stir and reduce the heat and simmer for about 10 minutes.uncovered. Stir in between until the green is cooked.  Do not over cook as we are going to puree it 

4. Add ½ tsp salt and ½ cup coconut milk and boil uncovered for 3 minutes.

5. Remove from heat. Set aside  Let it cool for at least 10 minutes.



6. In a blender or food processor add the leaves mixture and puree the mixture. I used a hand blender to puree the curry.

7. The red spinach curry is ready.

8. Slightly warm it and add juice  from 1 lime before serving.


9. This will make a wonderful accompaniment for rice or breads like chapatti.

500 grams red spinach

1 onion chopped coarsely
10 curry leaves
3 cloves garlic
1 green chili
1 red chili
½ cup coconut milk
½ teaspoon salt
1 lime – juice

Preparation
Spinach grows close to the ground. Therefore there will be sand adhering to the plant which you will have to wash thoroughly. The spinach is harvested usually with the roots. Without the roots they wilt away sooner.

Cut off 3 inches above the roots and discard the roots. The stem just above 3 inches the stem will be soft enough. You can feel the hardness with your fingers,

Wash well to remove sandy particles attached to the leaves. Chop them coarsely.

Spinach should be lightly cooked. I always puree it. You can also mash using the back of a big spoon.
