Easy Mixed vegetable rice with coconut milk
This is a very easy rice dish to make, because it is made in the 
rice cooker. The vegetables added give  a good taste and are also nutritious. It is very tasty so much so that you can eat it without any other accompaniments.  This is a vegetarian rice dish. But I served this rice with a very spicy chicken curry and sweet potato balls.

1. Wash 3 cups rice and drain and set aside.

2. Cut 100 grams French beans into small pieces, 100 grams carrot into small pieces and 100 grams cabbage  into small pieces and keep aside. I shredded in the food processor.

3. Place 1 tablespoon butter or ghee or olive oil in the rice cooker pan.  Switch on the rice cooker. Do not cover the pan. Butter will start to melt.

4.Add 2 cardamom, 2 inch piece cinnamon, 1 Bay leaf and 2 cloves. Cook for 2 minutes.

5. Add 1 onion chopped finely and cook till translucent.

6. Add the prepared vegetables and cook for 3 minutes.

7. Add ½ tsp salt, 1 cup coconut milk 5 cups water and stir well. 

8. Add the rice and stir again. Now cover the pan and let it cook until the cooker switches off.  Switch off the electricity connection to the cooker, otherwise the keep warm function of the cooker will dry up the rice.
  Now all the vegetables will be on top of the pan. Quickly and gently stir the rice with a wooden spoon.  If you do this the rice will not stick together and the vegetables will be well distributed.

3 cups Basmati rice

½ teaspoon salt
1 cup coconut milk
1 tablespoon butter or vegetable oil or ghee
5 cups water

You can substitute Basmati rice with any other rice that is available. Basmati rice tastes better and contains less starch compared to other rice. Particularly its good for diabetic patients as it is low GI rice.

I you are making your coconut milk use milk from 1 coconut. This is equal to 1 cup of concentrated coconut crème.

Preparation

Serve the rice while it is warm. You can serve it with egg plant curry or any other cooked vegetables. I served with fried sweet potato balls and spicy chicken curry.
