Cucumber is a super food for weight watchers. This vegetable contains a lot of water, as a result it takes more calories to digest it than it contributes to your system.

Smooth skinned green cucumber is always associated with salad and pickles. In fast food hamburgers picked cucumber is used. This crunchy and juicy vegetable is mostly welcomed by children as well as adults. Today it has taken a prominent place in juicing of vegetables. It has been used in stews. Do you know this cheap and abundantly available vegetable can also be made into a curry?  We can make delicious curries with spices, chilli powder, and coconut cream or with yogurt.

Today I am going to make a simple mild curry without any spices or oil. It will turn out to be as good as other curries.

1. Cut the top and bottom of the 2 cucumbers. It is customary to rub in a circular motion the cut pieces against the cucumber to elicit more sap out of it. Discard the top and bottom end pieces. 
Ingredients

2 Wash the remaining cucumbers to Peel the skin. Cut into half and scoop out the seeds.
Slice the cucumber and cut into ½ inch cubes.

3.Add all ingredients: 1 onion coarsely chopped,
1 green chili sliced thin, 3 cloves garlic sliced thin, 1 sprig of curry leaf chopped coarsely ½ cup water ½ tsp salt.  except coconut milk and pepper. 

4. Bring to boil, reduce heat and let it simmer for 15 minutes. 

5.Once cucumber is cooked add pepper and coconut milk. Cook for two more minutes and take off the heat. Don’t let it become very soft.

Easy mild cucumber curry is ready.

This curry can be served with rice or bread. You can also take this curry as a meal if you are dieting.
