Spicy fried chicken legs

Fried chicken is a very popular fast food that can be found almost anywhere. Usually these are fried in batter or with skin.. That means you will be consuming lot more saturated fat than is necessary.

Today I am going to make a simple fried chicken without any batter. This is a spicy dish. Don’t be taken aback with the word spicy. You can always reduce or eliminate chili and use only black pepper, yet get a tasty fried chicken.

1. Wash and dry 500 grams chicken legs.

2. Mix all the ingredients: 2 teaspoon chili powder, 1 teaspoon salt,
1 teaspoon turmeric powder, minced paste from 3   cloves garlic and 5 grams ginger slice and 1 teaspoon pepper  except vegetable oil for marinating in a glass bowl.

3. Cover the glass bowl with cling foil.
 Leave the bowl in the refrigerator for 1 to 2 hours. If it is urgent      leave for 10 minutes  and fry.


4.  Heat ½ cup oil in a medium sized frying pan or a wok till oil reaches 300°F.

Fry the legs in batches of 3 pieces. This will save you some oil. It will take about 6 to 8 minutes for the leg to turn into slightly dark brown color. Once the drumsticks are well cooked remove them with a slotted spoon and continue with the other batches.
Now the fried legs are ready. Serve while warm.

This fried chicken can be eaten as a snack, accompaniment for a beer. It can also be a substitute for your fast food fried chicken.

Main
500 grams chicken legs
Others
1 teaspoon salt

5 grams ginger slice
½ cup vegetable oil
Spices
2 teaspoon chili powder

Preparation
Chicken legs can be bought from stores. You may remove the skin from the legs before cooking. Skin contains more fat than the flesh.
If you fry with the skin, the skin will absorb all the marinades and will be crispy to bite after frying. On the other hand the flesh of the legs will absorb the spices and you will have the taste of the spice in all the meat, especially if you marinate it overnight.
Grind garlic and ginger together to form a paste Add a little water to make it becomes a paste. Set it aside. Ginger garlic paste will make the meat softer. If you want to marinate overnight you can add 3 table spoon of yogurt.

Wash and dry the chicken legs.
Mix all the ingredients except vegetable oil for marinating in a glass bowl.
