Spicy egg curry

Egg is not only nutritious but also very tasty and loved by everyone. It is also a very cheap food item. It is found all over the world. Hence there are numerous recipes using eggs. Eggs contribute cholesterol and therefore you should take it only in moderation.
Today I am going to prepare a spicy curry with hard boiled eggs.

1. Hard boil 6 eggs. Remove the shells. Make a slit on the white of the egg around the hard boiled to let the spices soak into it and enhance the flavour.

2. Boil 3 medium size potatoes. Remove the skin and cut into small pieces.

 3. In a large saucepan or a wok heat 3 tablespoon oil. When the oil is hot add 1 onion chopped coarsely. 

4. Add 1 green chili cut small.

5. Add  1 sprig curry leaf cut fine followed by 5" piece pandan leaf and 3" piece lemon grass.

6.Add  1/4 teaspoon cumin seeds, 1/4 teaspoon fenugreek seeds followed by cumin seeds, fenugreek seeds, 6 cloves garlic cut small, 1/2 teaspoon cut ginger and fry for about 5 minutes, stirring occasionally.

7. Add eggs, 1/2 teaspoon chilli powder,1 tablespoon curry powder, 1 teaspoon coriander powder

¼ teaspoon turmeric powder, 1/4 teaspoon pepper powder, and fry for one minute.

8. Add 3 cups water, and 1 teaspoon salt and boil covered for 15 minutes in very low heat.

9. Add 4 tablespoon coconut milk and boil for 2 minutes and take off the heat.

10. remove from heat and squeeze 1/2 lemon juice brfore serving.

The curry is ready. This will go with rice and bread.

Tip

There is an alternative way of preparing the boiled egg curry. Instead of making slits on the eggs, you deep fry them in medium heat until  they turn to a golden or light brown colour. Then you add this fried eggs as in the second paragraph of the Method described above.

Ingredients

Spices

1 teaspoon coriander powder
¼ teaspoon turmeric powder
1/2 teaspoon chilli powder
1 tablespoon curry powder
1/4 teaspoon cumin seeds
1/4 teaspoon fenugreek seeds
1/4 teaspoon pepper powder

Preparation


Hard boil the egg in whatever way you are used to doing it. Remove the shells. Make a slit on the white of the egg around the hard boiled to let the spices soak into it and enhance the flavour.

Method

 In a large saucepan or a wok heat the oil. When the oil is hot add onion, green chili, add  1 sprig curry leaf cut fine followed by 5" piece pandan leaf and 3" piece lemon grass, cumin seeds, fenugreek seeds, ginger and garlic and fry for about 5 minutes, stirring occasionally.

Add eggs, chili powder , curry powder, turmeric powder, pepper powder, coriander powder and fry for one minute.

Add water, and salt and boil covered for 15 minutes in very low heat.
Add coconut milk and boil for 2 minutes and take off the heat.


The curry is ready. This will go with rice and bread.

Tip
