Fried rice is liked by all. Probably it originated in China and popularized by Chinese restaurants and takeaways in other countries. Many cuisines have adopted the fried rice to suite their taste. This is one version of a spicy fried rice.
Main advantage of fried rice is that it is easy to make. Left over items can be used to make fried rice. It can be consumed without many accompaniments. If we are consuming rice we will want two or three curries to go with it.

1. Remove the skin and cut 250 grams chicken into thick chunks.
2. In a medium sized bowl add the chicken.
3. Add 1 tsp chili powder, ½ tsp pepper powder, ½ tsp turmeric powder, 1 tbsp corn starch, 1 tbsp vegetable oil and 1 tsp salt (according to taste) i table spoon oil and mix well. Let the chicken rest for 1 hour.

7. In a large skillet, melt 2 tbsp butter or ghee on a low heat.
8. Add 1 dry red chili and fry for 30 seconds.
9. Add 100 grams onion, coarsely chopped and fry for 3 minutes.
10. Add 1 green chili, finely sliced, red chili, finely sliced, 3 cloves garlic, sliced and 10 grams ginger, peeled and grated and fry for 3 minutes.
11. Add 80 grams tomatoes, diced and fry for 3 minutes.
12. Add 300 grams frozen mixed vegetables and pulled chicken and fry for 3 minutes.
13. Add 1/2 tsp curry powder (optional) and 1 tsp briyani spice powder and fry for 3 minutes.
14. Add 1 tsp broken chili and the fried eggs. If you like you can add the broken chili at the beginning with onion also.
15. Add the fried eggs 8 cups of cooked rice and cook for 5 minutes. Add some fish sauce to make it tastier.
16. The fried rice is ready. Garnish with chopped cut chicken pieces, cilantro or scallion and serve while hot with cucumber slices. You can also add scrambled eggs at this time instead of adding earlier.

I used a wok which is more convenient to stir rice.
Add the dry red chili and fry for 30 seconds.
