Gluten free flatbread with coconut

There are many people who are allergic to gluten. The breads that are commercially available on the shelves are mostly made of all purpose flour which contains gluten. Therefore it is not easy to find bread that is gluten free. If there is, it will be very expensive. Here is an inexpensive way of making gluten free bread. This is very delicious bread.

1. Grind 1 tbsp flax seed in a coffee mill. Mix it with 2½ tbsp plain water. Leave it for 10 minutes for it to rest.

2. Put 3 cups rice flour in a large bowl. Add 2 teaspoon sesame oil, 1 tsp salt, 4 green chilies, finely chopped, 100 grams onion, finely chopped, soaked flax seed paste, 100 grams shredded coconut and 50 grams spinach leaves, finely chopped and mix them well. 

3. Normal standard is one cup of water for each cup of rice flour. But the rice flour I had did not take that much of water. Water absorbing capacity depends on the type of rice flour. So, add water little by little until a thick dough is formed. I used only 2 cups of water for 3 cups of flour.

4. Make the dough into a big ball. I used additional rice flour to dust. 

5. Divided the dough into 10 small balls.

6. I applied vegetable oil to my hands and flattened them on my palm. You can make it thin or thick according to your preference. I wanted the bread to be thick. Thick bread should be fried at very low temperature for longer time. Thin bread should also be fried at low temperature but it will much cook faster.



7. I used a cast iron griddle to fry them. You can use a non-stick pan. I used very little oil on the griddle. You can add more oil in the frying pan if you like.

8. I cooked for about 3 minutes on each side. I flipped them every minute. I took them out when black spots appeared here and there on both sides of the bread to indicate that the bread is cooked.

9. Flat bread is ready. Serve it hot.


 I served it with stir fried snake gourd and a store-bought chili paste pickle. The boiled  potato stir-fried and any kind of hot chili paste or dip goes well with this bread.You can also serve with coconut sambol.

Method

Rice flour does not have the elasticity of the wheat flour and therefore does not bind well when made into dough. It will break when you make into flat bread. Rice flour bread will be crispier than wheat flour bread when toasted. You should take these factors into consideration when making dough with rice flour. I used flax seed paste as a binding agent. It worked well. You can use one or two eggs as biding agents. I wanted to make this a vegan dish so did not use egg.

Put the rice flour in a large bowl. Add sesame oil, salt, green chilies, onion, soaked flax seed paste, shredded coconut and chopped spinach leaves and mix them well.
