This is a simple and extremely easy dish to prepare. But it is incredibly tasty.

1. Slice 160 grams Eggplant into thin round slices. You may need to soak the sliced eggplant in water to prevent it from discolouration.


2. Slice 1 onion to get similar sized rings. Separate the rings.

3.Cut 1 green chili into very thin slices. You may deseed the chili before slicing if you want the salad to be mild.

4. In a medium sized frying pan or a wok, heat 1 cup vegetable oil. When the oil is hot, reduce the heat to low and add the eggplant slices. Fry till the eggplant slices become dark brown. This will take about 12 minutes.

5. Take the pan off the heat and remove the fried eggplant slices.
Add ½ teaspoon salt and green chili pieces. Mix well.


6. arrange the fried eggplant slices in the serving plate. Arrange the onion rings on top of the eggplant.

7. Squeeze ½ lemon evenly on the eggplant.

You can serve this with rice, tortilla or chapatti.

Optional

Sometimes I add yogurt to this salad. You can also add  any sauce of your liking.
