Vegetable rice with spices and yogurt |
In this recipe we add vegetables and spices to the rice and cook in a rice cooker.We save time by cooking the vegetables along with the rice. Rice absorbs the juices from the vegetables and becomes tasty. One negative factor is that I am adding potatoes which are also starchy.
This spicy rice eliminates the need of many accompaniments to the finished rice. Some fried vegetables and some dips and sauces or pickles would suffice.
It is great with cucumber raita. (cucumber salad with yogurt)

1. In a large frying pan or a wok heat 2 tablespoon butter or vegetable oil Reduce the heat to medium. Add 1 stick cinnamon,
5 cloves and 3 cardamom and fry for 30 seconds.
2. Add 1 lemon grass skin removed and cut into two pieces followed by 1 thinly sliced red chili and 1 thinly sliced green chili and fry for a minute.
3. Add 100 grams potato peeled and cut into bite size pieces and stir-fry.
4. Add 50 grams leeks cut into small pieces, 50 grams cabbage cut into small pieces, 70 grams grated carrot and 10 curry leaves one by one. Fry for about 5 minutes.
5. Add ½ tsp cumin seeds and ½ tsp fennel seeds and fry for 1 minute.
6. Add ½ tsp turmeric powder, 1 tsp chili powder, 1 tsp coriander powder and 1 tsp garam masala fry 1 minute. Turmeric powder will give a yellow color to the rice.
7. Switch on the rice cooker add a 1 table spoon of butter or ghee fry add 1 bay leaf and fry for a minute.
8. Add 2 cups of long grain rice and stir add fried vegetable mixture.
9. Add 4 tbsp yogurt, 1 tsp salt and 4 cups of water. Mix well and cover the rice cooker.
10. In 25 minutes it will be ready Cooking time may vary.
11. When the rice cooker stops stir the rice with a ladle or a long chop stick to prevent the rice grains sticking to each other and forming lumps. Spicy rice is ready.try and enjoy it.

1 green chili
1 red chili
10 curry leaves chopped
70 grams carrot grated
50 grams cabbage cut into small pieces
50 grams leeks cut into small pieces

1/2 teaspoon turmeric powder. This will give a yellow color to the rice.

Keep the rice cooker ready .

Method
