Cucumber salad with yogurt |
This is a popular salad in India. This salad is made with yogurt and served with rice or chapatti. Today I am using Japanese cucumber to make this salad. We can use English cucumber as well and use the same ingredients. Cucumber salad can be made with other ingredients too without yogurt. This salad is a good accompaniment to spicy rice. I have introduced vegetable rice with spices and yogurt. we just had this rice with only the cucumber salad. I hope you too will enjoy it.

1. Peel and remove the core and seeds of 400 grams Japanese cucumbers (4 pieces). Cut into very small cubes. Alternatively you can grate or process in a food processor.
2. Mix cucumber pieces, 100 grams finely chopped onion, 1 green chili, sliced thinly sliced, 1 thinly sliced red chili, 50 gram yogurt, 1 teaspoon salt, ½ tsp black pepper powder in a bowl.

You can also use Greek yogurt which is thick.
3. Keep in the fridge for 20 minutes.Add salt before serving.
