Sweet potato is one of the healthiest foods. Purple sweet potato is said to contain three times the antioxidants of a blueberry.

When buying sweet potatoes look for smooth and skin not bruised. Choose small or medium size and avoid large ones. Sweet potatoes will last up to a month if stored properly. But try to use it within one week. It does not require refrigeration.

Sweet potato comes in many colors. Color of the inner part will be different from the outer skin color. Inner flesh color may be white, orange red or purple. The purple variety is the sweetest.

This is a natural dessert with no spices and no condiments. If you want you add a little bit of salt or sugar to enhance the taste. I did not add anything as the natural taste was sufficient to make a tasty dessert.

1. Peel and wash the 300 grams purple sweet potato and cut into ¾ inch cubes.

2. Put the sweet potato pieces in a pan and add water to cover it. May be around one and a half cup.

3. Boil in medium heat for about 10 minutes or until the sweet potato is very soft. once it is cooked add the 1/4 cup coconut milk and stir. it will thicken.                                                                                                                                             

4. Mash it with a spoon or use a hand blender or food processor to puree the sweet potatoes.


5. Serve it as a dessert with some finely chopped cashew nuts.
