Moringa Leaves Sothi - Moringa Leaves Coconut milk Soup |
Coconut milk is delicious and can be consumed on its own as a drink. Coconut is good for you and don’t hesitate to use it to enhance the flavour of whatever you are cooking. Fresh coconut milk can be extracted from shredded coconut kernel. Concentrated coconut milk is available in Tetra Pak cartons, in cans and in powder form. Coconut cream also can be bought from the stores.

Moringa Leaves Sothi - Moringa Leaves Coconut milk Soup
It is popularly served with string hoppers (also known as idiappam or puttu mayam in Singapore and Malaysia) for breakfast and sometimes for dinner. It is also served with rice especially when the side dishes to the rice are dry.
It can also consumed on its own.

1. Wash 300 grams moringa leaves and shake to dry. Strip the leaves from the stem and set it aside.
2. Wash 50 grams shelled prawns and add half the amount salt and 1/4 tsp turmeric powder. Mix well and set it aside.
3. Heat 3 cups water in a large sauce pan or a wok and add 1 chopped onion, curry leaves, 2 sliced cloves of garlic and 2 chopped green chilies, 1/4 tsp turmeric powder, ½ tsp cumin, ½ tsp fenugreek seeds, ½ tsp pepper powder 1 tsp salt and simmer for 5 minutes.
4. Add prawns and cook for 3 minutes.
5 Add moringa leaves and cook for 5 minutes
6. Add ½ cup coconut milk and cook uncovered for 2 minutes.
7. Remove from fire and add 1 Tbsp lime juice.

I deep fried some moringa leaves for fun. This is not a recipe. It tasted good. |
1. Add 1 tsp of corn starch to the coconut milk to prevent it from curdling.
2. One medium size coconut, gated, will yield 500 ml of coconut milk. Coconut milk can be purchased in packets and cans.
