Making an omelet with greens is not a new idea. What I have done is to introduce some Asian spices so that it will be tastier. Unlike the normal omelet, this omelet is not suitable for taking it on its own. It is best to take it with bread. I took this with couscous.

Kale has a slightly bitter taste but with the spices and egg it tasted good. Ideally kale should be consumed raw to get full nutritional benefits. If you don't like its bitter taste, then this is an option for you.

1. Chop 75 grams kale, 100 grams onion and 1 green chili separately in a food processor into fine pieces. 
Ingredients

2. In a medium sized bowl, add 1 tsp chili powder, 1/2 tsp salt (or to taste) and 1/4 tsp pepper powder (or to taste). Add one tbsp water or milk and stir well mix all the ingredients. It will become a red paste as you see in the picture.

3. Break three eggs (any number of eggs you want) into the bowl. Use an egg beater and beat the eggs till mixture becomes nice and fluffy and mixed well with the chili paste.

4. Mix shredded kale with the beaten eggs

5. In a non-tick pan (I used a wok) add two tablespoon of oil and heat it up. 

6. When the oil is hot add onion and 1 green chili, sliced thin and fry in medium heat for 3 minutes over slow fire. Do not caramelize the onion Just sweat the onions. 
Stir frequently to prevent some of the onion pieces from being burnt. Remove when it is done.

7. Add the fried onion mixture to the beaten eggs and mix well.

8. Add 2 table spoon vegetable oil. I used sesame oil it gives a soft texture to the fried eggs and it is also pleasant to eat.

9. Reduce the heat to low and add the beaten eggs. Fry for about 3 minutes. Flip over the egg, before the bottom part gets burnt. It does not matter even if there is some egg in the form of liquid. Add more oil if needed.

10. Fry for another two minutes or till all of the egg becomes hard Flip over again.

That is it. The omelet is ready. You can put a slice of the omelet between two slices of bread and make a sandwich.

Method

Break the eggs into the bowl. Use an egg beater and beat the eggs till mixture becomes nice and fluffy and mixed well with the chili paste. I used a fork to beat the eggs. You can use an egg beater.

You can also add chili powder, salt and pepper directly to the broken egg.  The chili powder will not mix easily with the egg. There will be some dry balls of chili, here and there. If you beat the egg vigorously or use a hand blender, it will mix well and will be nice and fluffy.
