Tender green beans stir fry with sprats (anchovies) and carrot



Tender beans are harvested early before they mature. They do not have fiber like the mature beans. They do not have the strong flavor also. I like tender beans. If you don’t get tender beans you can use any green beans that are available. Very mature beans with long fibers is not suitable for stir- fry. Today I am going to stir-fry them.

Preparation
1. Soak 100 grams dried sprats in hot water for 10 minutes. This will remove the excessive salt and strong smell. Drain and set aside.

2. In a large frying pan or a wok heat 4 tbsp vegetable oil. When the oil is hot, reduce the heat to low. Add drained sprats and fry for 5 minutes. It will turn into light golden color.  Remove the sprats and set aside.

3. Cut 500 grams green beans into small pieces.

4. Add 2 table spoon oil ans add 2 dry red chilies broken into small pieces, and fry for 1 minute.  Add 2 large onions sliced into small pieces and fry for about 5 minutes.

5. Add ½ tsp cumin seeds, 3 cloves thinly sliced garlic, 1 sprig curry leaves shredded into small pieces, 1 thinly sliced small green chili, 1 thinly sliced small red chili and 10 grams finely diced ginger and fry for another 5 minutes.

6. Add 1 tsp turmeric powder and 1 tsp chili powder,  and continue to fry. If the onion is too dry after the addition of chili and turmeric powders add ¼ cup of water.

7. Add the green beans and  fry for a minute. Stir to mix the ingredients. 

8. Add sprats, 1 tsp garam masala powder (or ½ teaspoon cinnamon powder), 1 tsp salt and 1 cup water  to cover the vegetables. Bring to a boil and reduce the heat and let it simmer, covered. It may take about 10 minutes to cook.

9. when it is done add 90 grams grated carrot and continue frying for another 5 minutes. If you add some grated coconut it will be more tastier.


10. The green bean stir-fry is ready. Serve with rice or bread.

Ingredients
Main
500 grams tender green beans – cut into small pieces.
100 grams sprats
90 grams carrot (1 piece) - grated
Others
2 dry red chillies broken into small pieces
3 cloves garlic finely diced
10 grams ginger finely diced
2 large onions sliced into small pieces
1 small red chili
1 small green chili
1 sprig curry leaves shredded into small pieces
Spices
1 teaspoon turmeric powder
1 teaspoon chili powder (not curry powder)
½ teaspoon cumin seeds
1 teaspoon garam masala (or ½ teaspoon cinnamon powder)

1 teaspoon salt
4 + 2 tablespoon vegetable oil

Preparation

I used dried salted sprats(anchovies). It is very time consuming to clean fresh sprats. If you are using fresh sprats you will need about 150 grams of it. Soak the dried sprats in hot water for 10 minutes. This will remove the excessive salt and strong smell. Drain and set aside.

 Add dry red chili pieces, and fry for 1 minute.  Add onion and fry for about 5 minutes.
Add cumin seeds, garlic, curry leaves, green and red chilies and ginger and fry for another 5 minutes.
Add turmeric powder and chili powder and continue to fry. If the onion is too dry after the addition of chili and turmeric powders add ¼ cup of water.

Add the green beans and fry for a minute. Stir to mix ingredients.

Add sprats, garam masala powder, salt and 1 cup water  to cover the vegetables.

 Bring to a boil and reduce the heat and let it simmer, covered. It may take about 10 minutes to cook.  when it is done add grated carrot and continue stir-frying for another 5 minutes.

 If you add some grated coconut it will be tastier.
The green bean stir-fry is ready. Serve with rice or bread.
