Using an egg slicer cut 3 boiled eggs. You will have finely shredded eggs.

2. Mix all the    ingredients : 
1 Onion chopped fine, 1 green chili sliced fine, ½ red bell pepper sliced fine,½ yellow bell pepper sliced fine,½ teaspoon salt,1 teaspoon butter.1 tablespoon mayonnaise   in a medium sized bowl and mix well using two spoons. While mixing break down the egg pieces further. Mayonnaise will bind all the ingredients together.

3.Toast the 6 bread pieces. Apply butter on one side of the bread.


4. Now spread a layer of this mixture on top of the butter layer. Cover with another bread piece. Slice diagonally into two halves to give it a triangular shape. You can also include finely cut parsley.    
                       Egg sandwich is ready.

Preparation

Using an egg slicer cut one side with all the pieces intact cut the other side.  You will have finely shredded eggs or cut and shred the eggs using a butter knife.

Method
Mix all the ingredients  in a medium sized bowl and mix well using two spoons. While mixing break down the egg pieces further. Mayonnaise will bind all the ingredients together.

Sandwiches are made in many different ways. Any salad when put in between two pieces of bread becomes a sandwich. Similarly many meats, fish and sea food can be included in sandwiches. I have shown a recipe with chunky pieces of egg.

 Today I am going to make a paste out of the egg. I ground parsley with the egg which gave a green tint to the egg and the taste of parsley dominated the paste.

1. Boil 3 eggs, remove the shell put it in an egg slicer and cut the egg into small cubes by slicing on two sides.

2. Place all the ingredients:  1 onion finely chopped,
    2 sprigs of fresh parsley, 1 green chili sliced thin,

¼ teaspoon pepper powder, 1 tablespoon butter in a medium sized bowl. Use a hand blender to make a thick paste of the ingredients. Do not add any water or oil. The moisture in parsley and onion is sufficient to from the paste of suitable consistency. Set the paste aside.

You can use toasted or untoasted bread to make the sandwich. Spread butter on one side of the bread.   Then spread a thick layer of the egg paste on top of the butter. On another slice of bread spread a lettuce leaf and cover the bread with the egg paste on it. Slice the sandwich to your liking.

Ingredients

1 onion finely chopped
2 sprigs of fresh parsley
1 green chili sliced thin
1 red chili finely sliced
½ teaspoon salt
¼ teaspoon pepper powder
3 lettuce leaves
1 tablespoon butter
6 slices bread

Preparation
Make sure that the eggs are fresh. Please see my helpful hints Is the egg fresh?
Place the eggs in a medium size pan. Add water to cover the eggs. Bring to the boil. Reduce the heat to medium and cook for 10 minutes. Remove the pan from the heat and let it cool down and then remove the shells.
Adding ½ teaspoon of baking soda to a quart of water and boil the egg in this water, it will be easier to peel the shells off.  This may intensify the sulfur like flavor of the egg. Fresher the egg it is more difficult to peel.

Boiling the egg longer by 2 or 3 minutes to 12 or 13 minutes and then immersing the egg in iced water or storing in the refrigerator to chill will make it easier to shell the egg.
After cracking the top and bottom of the egg and rolling the egg with your palm on a table top will create numerous cracks on the shell and it will be easier to remove the shell thereafter.
After peeling the egg put it in an egg slicer.

When you cut along both sides egg is shredded into pieces.

Method
