Butternut squash (Cucurbita moschata) is known in Australia and New Zealand as butternut pumpkin or gramma, and "Batana" in Sri Lanka. It has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. It is available in the market all the year round.

Butternut squash has many vital poly-phenolic anti-oxidants and vitamins. It has more vitamin A than that of in pumpkin..It is cooked like pumpkin. Today I am going to make a very simple salad using it.

Serves: 4

1. Wash, peel 130 grams butternut pumpkin and remove the seeds.

2. Cut the vegetable into ¼ inch or ½ inch cubes.

In a medium sized steamer add the squash pieces and steam them for about  ten minutes. Set aside to cool.

3. Mash the steamed squash  well. I used the hand held blender to mash.

Mix all the ingredients: 100 gram onion chopped fine, 2 green chillies finely chopped, ½ cup Yogurt, ½ tsp pepper and  ½ tsp salt to taste together to form the salad.

That’s it. The salad is ready. 

4. The sweetness of the pumpkin, sour taste of yogurt and hot chili give a pleasant taste for this dish. It is quick and easy to make.


 It can be served with rice or as accompaniment to any main dish.

 Although the skin and seeds are edible, they are not usually cooked. The hard skin becomes soft when roasted. Cut the vegetable into ¼ inch or ½ inch cubes.

Method
