French beans with coconut milk

This is a quick and easy French bean preparation. It is very mild. It is a healthy dish because we are not going to fry anything.

French bean is a versatile vegetable that can be used in many forms of cooking.
French bean is nutritious. It provides us with micro-nutrients, minerals and vitamins like A, B1, B6, C and lutein, zeaxanthin and beta carotene.

Coconut milk is highly nutritious and rich vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous.

1. In a saucepan add all ingredients:  250 grams French beans; 90 grams chopped onion (1); 1 green chili, finely chopped; 4 garlic cloves chopped;  ¼ inch ginger chopped; 6 Curry leaves; ½ tsp pepper powder; ½ tsp cumin; 1½ cup cup water except ½ cup coconut milk and bring to boil and let it simmer, covered, till the beans are cooked.


2. Add coconut milk and cook for 5 minutes.

This dish can be taken on its own or served as a side dish. It can also be served with rice or bread.

Method

In a saucepan add all ingredients except coconut milk and bring to boil an d let it simmer, covered, till the beans are cooked.
