Winged bean is known by various names; Goa bean, asparagus pea, four-angled bean, four-cornered bean, Manila bean, Mauritius bean, and winged pea. It grows well in hot and humid conditions. All parts of the plant are edible.

Winged bean plant is a creeper which requires support. When grown along the fence to gives coverage as well as pleasant view.

Winged beans are rich in folate and vitamin C. The nutritional value of winged bean is shown here.
Winged bean seeds have some trypsin inhibitors.

When you buy winged bean pods always choose immature pods with shiny greenish colour. The winged beans can be refrigerated up to 4 days but try to consume it as early as possible.

Winged beans can be added to soups, stews, salads pickles, and stir-fries. It can be grilled or roasted and seasoned with salt and pepper.

Today I am going to make a curry with winged beans. This a mild curry and no curry powder is used.

1. Clean and cut off the ends of 100 grams winged beans and pull off the string on both sides. Slice them into ¼ inch pieces.

2. Chop 1 onion coarsely, slice 1 green chili, chop 1 garlic clove fine and cut 5 curry curry leaves. Wash peel and cut 1 potato into ½ inch cubes. Wash and slice 100 grams  leeks  into ½ inch pieces.

3. In a medium sized saucepan add all the above ingredients ½ teaspoon cumin seeds, ½ teaspoon fennel seeds, ½ teaspoon pepper powder, ½ teaspoon salt and add 2 cups of water.

4. Cover and bring to a boil and reduce the heat. Simmer for 15 minutes or till the potatoes and winged beans are soft.



5. Add ¼ cup coconut cream.
Continue boiling for another two minutes. Test for seasoning and adjust.



Winged bean mild curry is ready.

Ingredients
Main
100 grams winged bean sliced into ½ inch pieces
100 grams leeks sliced into ½ inch pieces
Others
1 onion chopped coarsely
1 potato sliced thin
1 green chilly sliced thin
1 garlic clove chopped fine
5 curry leaves cut fine
½ teaspoon salt
¼ cup coconut cream
2 cups of water

Spices
½ teaspoon cumin seeds
½ teaspoon pepper powder
½ teaspoon fennel seeds

Clean well and slit at the end.  Sometimes you may get some fiber, then pull off the string on both sides. Slice them into 1/4 inch pieces.
Method
chop onion, green chili, and curry leaves. Wash peel and cut potato into thin pieces. Wash and cut leeks.,
In a medium sized saucepan add all the ingredients including cumin,fennel, pepper powder except 1/4  coconut cream and add 2 cups water.

Cover and bring to a boil and reduce the heat. Simmer for 15 minutes or till the potatoes and winged beans are soft.

Add the remaining pepper powder and coconut cream.
Continue boiling for another two minutes. Taste for seasoning and adjust.


The winged bean curry is ready and it can be served with rice while hot.
