Sandwiches are a versatile type of food that can be made at home. When you are in a hurry or when you get an unexpected visitor it will be handy. If you are going on a picnic it will be very useful. While you can get sandwich almost anywhere, home made sandwich will always taste better. It is easy to make and you can make it with whatever that is in the kitchen.

I am giving some sandwich recipes that I make often.

Now I will give you summaries for the following 2 sandwiches for easy reference.

                                    Roast chicken sandwich

1. Use a fork to pull the flesh into small bite size shreds from a roasted chicken with salt and pepper. 

2. Heat 1 Table spoon oil in a wok and add finely cut 1 onion and add 1/2 tsp chilly powder and fry till translucent and add the curry leaves and fry for a minute.

3.Add the shredded chicken. Stir well and fry for 2 minutes.



4. spread butter on the bread slices and sprinkle the chicken on the bread slices  and cover with another piece of bread,

Roast chicken sandwich is ready.

                         Roast Chicken Sandwich

Preparation time: 20 minutes
Cooking time: 15 minutes
Serves: 4

Ingredients

Main
1 small chicken roasted
Others
1 table spoon of butter
1 onion cut finely
 6 curry leaves
1/2 tsp chilly powder
1 Table spoon oil
8 Slices of bread

I had the roasted chicken in the deep freezer. It was roasted with salt and pepper and no other seasoning. I will upload the roast chicken recipe in the future.
I used a fork to pull the flesh into small bite size shreds. Cut the onion and add chilly powder. Heat oil in a wok add onion and fry till translucent and add the curry leaves and fry for a minute. Add the shredded chicken.Stir well and fry for 2 minutes.
I spread butter on the bread slices and sprinkled the chicken on the bread slices  and covered with another piece of bread,

                Avocado, Kale and Roast Chicken Sandwich

1. Use a fork to pull the flesh into small bite size shreds from a 200 grams roasted chicken with salt and pepper.

2. Peel and slice 1 avocado into 1 inch cubes. Add 

1 teaspoon of lemon juice. This will prevent the discoloration of avocado.

3. Mash the avocado pieces lightly with a hand blender. Keep the avocado aside.

 In a medium sized bowl

I added 1 avocado, Roasted chicken flesh, 1 onion finely chopped,  1 green chili finely chopped,1 medium sized tomato finely 

chopped and 2 kale leaves chopped. Mix all ingredients well. Add 2 table spoon mayonnaise and mix well. Mayonnaise will bind all the ingredients together. Add pepper and salt.

4. Cut the bread into slices. Toast the slices if you like. Spread butter thinly and keep it aside.



5Spread layer of the mix on the bread slice and cover with another slice. I could not get baguette. I used a bigger bread and I had to cut in a different way and insert the spread accordingly. You can use mayonnaise instead of lemon juice.

Ingredients

Main
200 grams roast chicken
1 ripe avocado
2 kale leaves chopped coarsely.
Others
1 bread for sandwich
1 medium ripe tomato.chopped fine
1 teaspoon of lemon juice
½ teaspoon salt
½ tsp pepper
1 onion chopped fine
1 green chili chopped fine
1 red chili chopped fine
1 teaspoon butter
2 table spoon mayonnaise

Preparation
Pull the chicken with a fork into small pieces.
