Moringa pod and eggplant mild curry
Moringa pod and eggplant make an excellent combination for a mild curry. Usually this curry is made for those who have stomach upset or ailments like flu. We are not going to use any oil to fry as it is not good for those who have stomach upset.

Serves: 4

1. Prepare 200 grams of moringa pods ( drumsticks)  for cooking.

2. Wash and slice 200 grams of eggplant into ¼ inch cubes and soak them in salt water to prevent discoloration.

3. In a large sauce pan add all the ingredients :

  moringa pod,  egg plant, 1 onion chopped coarsely, 10 curry leaves chopped,1 green chili seeded sliced thinly, ½ teaspoon salt, ¼ teaspoon cumin seeds,  one cup of water and bring to the boil  except  coconut cream and ¼  teaspoon of pepper.  Lower the heat and simmer covered for 20 minutes.

4. Add ½ cup coconut cream, and ¼ teaspoon pepper. Taste for seasoning and adjust.

This is a mild curry curry for children and people who are sick.

200 grams of moringa pods ( drumsticks)

Others

½ cup coconut cream
½ teaspoon salt
 ¼ teaspoon cumin seeds
 ¼ teaspoon pepper powder

Method
In a large sauce pan add all the ingredients except  coconut cream and pepper. Add one cup of water and bring to the boil. Lower the heat and simmer covered for 20 minutes.

Add coconut cream,  and pepper. Cook for 2 minutes

Taste for seasoning and adjust.

This curry can be served with rice or bread.
