Kimchi mushroom soup

Kimchi is a favorite of the Korean people. They will take kimchi daily. They will consume kimchi with rice, vegetables and soup. Practically with every lunch and dinner Koreans have a soup as well.

Kimchi mushroom soup is a Korean style hot and spicy soup.This is a vegetarian soup. If you want a mild soup, omit the kimchi and chilli powder and substitute with salted mustard leaf, sliced into bite size pieces.

1.  Heat 4 tablespoons sesame oil in a saucepan and sauté 5 shitake mushrooms stems removed, sliced thin for about 8 
minutes and add 3 cloves garlic minced, 5 grams ginger finely chopped and 1 teaspoon chilli powder. Stir and continue frying for another 2 minutes.

2. Add 2 teaspoons soy sauce, 2 cups of water, 500 ml vegetable broth, 150 grams soft tofu cut into cubes tofu, and 100 grams kimchi, cut into bite-size pieces .

3. Bring to the boil and simmer for 20 minutes, covered. Add 50 grams enoki mushroom base trimmed and continue simmering for another 5 minutes.

4.  Remove from heat.

Kimchi mushroom soup is ready.

We are going to use shiitake mushroom and enoki mushroom in this recipe. Both these mushrooms are of Japanese origin.
Shiitake mushroom has anti-cancerous and antifungal properties.

50g enoki mushroom, base trimmed

Method

4.       Ladle soup into individual bowls and serve with rice.
