Couscous is a staple food throughout the North African countries like Morocco, Algeria, Tunisia, Mauritania, Libya and the Western Sahara. Today couscous is found all over the world. It is a very tasty and soft form of wheat. It is usually steamed and served with meat or vegetable stew, Couscous is made from semolina of durum wheat.

Ingredients
1. Cut 50 grams carrot, 150 grams beans, 100 grams asparagus and 150 grams kailan into ½ inch pieces.

2.  Microwave carrot and beans covered for 2 minutes on high.
Microwave asparagus covered for 1 minute on high.
3. In a small frying pan or wok add 1 table spoon oil and heat it. 
Add 1 Onion sliced roughly and fry for 5 minutes. 

4.Add 1 dry red chili sliced into small pieces and fry for 2 minutes.

5. Add 1 green chili sliced into small pieces and 1 sprig curry leaf (optional), roughly chopped and fry for one minute.

6. Add kai-lan and fry for one minute.

7. Add the micro waved vegetables (carrot, beans and asparagus) and stir-fry for one minute. Add salt. Take off the heat and set it aside.

How to cook couscous
Boil 625 ml water in a medium sized saucepan with 2 teaspoon salt and 3 tablespoon oil. When the water comes to a boil take the saucepan off the heat,

Pour 500 grams couscous into the boiling water while stirring well. Cover and keep for 5 minutes. Now the couscous will be cooked. Now add 1 tablespoon butter and stir well. couscous is ready

Now add the stir-fried vegetables to the couscous and mix well to evenly distribute the vegetables.


Now you can eat couscous. To make it delicious Serve couscous in a dinner plate and top it with mushroom balls. Pour curry sauce and serve while warm. ( curry sauce and mushroom balls.)

The couscous you buy in the supermarket today is an instant variety which is pre-steamed and dried. It is fast and to prepare. It is a tastier substitute for rice and pasta.

The packet which contains the couscous will have directions to cook it. It will also state the amount of water, oil and butter to be added.

Today I am going to make mixed vegetable couscous with curry sauce and mushroom balls. The couscous I bought was a 500 gram packet. I followed the instruction as given in the packet.

500 grams Couscous

Others
625 ml water
3 tablespoon vegetable oil of your choice
1 tablespoon butter
2 teaspoon salt
Curry leaf, broken red chili, onion and green chili

50 grams carrot
100 grams asparagus
150 grams French beans (tender)

150 grams baby kai-lan (tender) (or any other leafy vegetable 
such as kale, spinach, cabbage, lettuce etc)
1 Onion sliced roughly
1 green chili sliced into small pieces
1 dry red chili sliced into small pieces
1 sprig curry leaf (optional), roughly chopped
1 tablespoon of vegetable oil
¼ teaspoon salt

Preparation
Dice the carrot into ½ inch cubes.
Slice the beans into ½ inch pieces.
Slice the asparagus also into ½ inch slices but leave the top (flower) as it is.
Slice kai-lan into ½ inch pieces.
Microwave carrot and beans covered for 2 minutes on high.
Microwave asparagus covered for 1 minute on high.
In a small frying pan or wok add oil and heat it. Add onion and fry for 5 minutes.
Add dry red chili pieces and fry for 2 minutes.
Add green chili and curry leaves pieces and fry for one minutes.

Method

Boil the water in a medium sized saucepan with salt and oil. When the water comes to a boil take the saucepan off the heat,
Pour the couscous into the boiling water while stirring well. Cover and keep for 5 minutes. couscous will be cooked.
Now add the butter and stir well.
Now couscous is ready.

Now add the stir-fried vegetables to the couscous and mix well to evenly distribute the vegetables. you can eat as it is.

Serve couscous in a dinner plate and top it with mushroom balls. Pour curry sauce and serve while warm.
